Exotic Rosemary, Saffron Cookies with dark chocolate & sea salt

YUMMMMY RECIPE!!!! Plus did I mention easy, vegan & uniquely delicious with the queen of spices shining brightly, Miss Saffron! Lovely for an afternoon tea party & experiment with other herbs or spices to create different versions such as lemon & poppy seed OR Thyme & orange blossom...
Makes 12 cookies
1 ½ cups ground almonds (170g)
1 tsp vanilla paste, powder or extract
1 Tbsp. finely chopped fresh rosemary
1 tsp. saffron threads, plus a few more to garnish
Pinch of sea salt, plus more to garnish
3 Tbsp. pure maple syrup or sweetener of choice
4 Tbsp. olive oil, or coconut oil, melted
12 small pieces of dark chocolate (80% or higher)
Preheat oven 160C
Method
Line a baking tray with greaseproof paper. Mix all ingredients together to form a ball. Divide the mixture into 12 smaller balls, pop onto your tray & gently press a piece of dark chocolate onto them. Bake in the oven for 12-14 minutes or until lightly golden. Cool & store in an airtight container. You may want to double the recipe too….because did I mention they were YUMMMMMMY!!
