This vibrant, crunchy, FRESH almost granny smith apple-vibe is a real flavourbomb for elevating everrrrrything!! Flop a tangy forkful onto eggs, salads, burgers, grilled meats, poultry, fish even soups! What are you waiting for….go make some, they pickle in the fridge in half an hour or can be made in advance for a dinner party, it’s as simple as that!

INGREDIENTS
  • 1 medium kohlrabi, peeled and cut into sticks or wedges (200g)

  • 150ml. Coconut Cider Vinegar or ACV

  • 1 Tbsp. erythritol/stevia blend or sweetener of choice

  • 1/4 tsp black peppercorns

  • 1/4 tsp whole cloves

  • 1 cinnamon stick, broken in half

  • 2 fresh bay leaves

  • 100ml water, or enough to cover your kohlrabi

METHOD
  • Add the vinegar, erythritol, herbs and spices to a saucepan and heat to dissolve and infuse. Add your sliced prepared kohlrabi to a clean sterile jar and pour over your warm liquid, cover with water as needed. Leave to pickle in the fridge for at least 30 minutes or up to three days ahead,  it’s as simple as that! Delishhh served with ANYTHING!
