To pimp your everrrrrrthing!!! I love to make celery leaf salt with a number of different salts, but flaky whispers of Maldon is my favourite! Celery salt is delicious on buttery green beans, in soups, stews, savoury yoghurt, sprinkled over eggs, roast chook, bloody mary’s…You get the idea! This is a great way to use up your celery leaves too by making your own funky salt, which can be kept on the bench to season anything! Couldn’t more simple or rewarding using up your kitchen waste!

INGREDIENTS
  • Leaves from one bunch of celery

  • 1/3 cup of your favourite sea salt, or add to taste

METHOD
  • Preheat oven 180C. Pluck off your celery leaves without stems, wash and dry them gently. Place celery leaves in a single layer on an oven tray and bake for about 10 minutes, till crispy, almost dehydrated and still remaining green-ish (not brown or they will go bitter) cool slightly. Blitz by hand using a mortar and pestle or in a spice grinder and add your favourite salt (smoked salt or citrus salt is glorious too). Place into a clean dry jar.  Keep it on the bench. Enjoy
