You wont get your tinsel-in-a-tangle with this homemade treat!! Its as easy as it is delicious with a fabulous combo of fresh cherries, coconut and dark chocolate!!

INGREDIENTS
  • 3 Tbsp. extra virgin coconut oil or cacao butter

  • 300g dark chocolate, chopped up

  • 2 cups fresh cherries (or frozen) or bottled cherries in juice (unsweetened)

  • 1 1/2 cups desiccated coconut

  • 3 Tbsp. pure maple syrup

  • Pinch of sea salt, to taste

  • TO GARNISH

  • 1/4 cup of freeze dried cherries or raspberries to garnish

  • 1/4 cup of pistachios, roughly chopped

  • Dried rose petals, to garnish (optional)

METHOD
  • Melt the chocolate and half the coconut oil in a saucepan. Allow to cool slightly.

  • Pour 2 tsp of chocolate into small silicone cups and gently rotate the cup to coat the sides with the chocolate. Repeat with remaining cups and set aside in the fridge or freezer to set, while you make the cherry filling.

  • To make the cherry filling, place stoned cherries into a saucepan with a splash of water or rosewater over medium heat. Cook for 5 minutes or until a jam like consistency. Place the cherries into a food processor with, coconut, maple, salt and remaining coconut oil and blitz together to combine.

  • Carefully spoon the cherry mixture into the cups, leaving room at the top for another layer of chocolate

  • Pour the remaining melted chocolate on top of the cherry mixture while still hot and not set, garnish with freeze dried cherries or raspberries and chopped pistachios, if desired. Returen the cups to the freezer for at least an hour until set before removing and enjoying with a pile of fresh berries. Yum!
