YUMMMMY RECIPE!!!! Plus did I mention easy, vegan and uniquely delicious with the queen of spices shining brightly, Miss Saffron! Lovely for an afternoon tea party with ya girlfriends, healthy never tasted so good!
Makes 12 cookies
1 ½ cups ground almonds (170g)
4 Tbsp. olive oil, or coconut oil, melted
1 Tbsp. finely chopped fresh rosemary
1 tsp. saffron threads, plus a few more to garnish
3 Tbsp. pure maple syrup or sweetener of choice
1 tsp vanilla paste, powder or extract
12 small pieces of dark chocolate (80% or higher)
Pinch of sea salt, plus extra flurry on top
Preheat oven 170C Line a baking tray
Mix all ingredients together to form a ball. Divide the mixture into 12 smaller balls, pop onto your tray and gently press a piece of dark chocolate onto them. Bake in the oven for 12-14 minutes or until lightly golden. Cool and store in an airtight container. You may want to double the recipe too….because did I mention they were YUMMMMMMY!!
