Not quite sold on chia puddings due to the seedy texture and lil bits that get caught in your teeth? By jove I think she’s got it!! BLEND IT, to make a thick unctuous creamy and mousse-like pudding, which is healthy enough for breakfast and totally dessert-worthy!! Chia seeds are wholesome goodness, high in essential omega 3 fatty acids, high in fibre, even protein and minerals…cant wait for you to try this beauty!!

INGREDIENTS
  • Serves two/three (1/3 cup serving per person)

  • 1/3 cup chia seeds

  • 1 cup (250ml) almond mylk, or nut mylk of your choice

  • 1 heaped Tbsp. cacao powder

  • 1 tsp. pure vanilla extract

  • 1 tsp. cinnamon powder

  • 1 tsp. maple syrup or sweetener of choice

  • Pinch of sea salt

  • Optional: Garnish with blueberries & freeze dried blueberries OR dark chocolate chunks, roasted hazelnuts, cacao nibs, coconut chips for crunch etc

METHOD
  • Place all the ingredients (except blueberries) in a high speed blender and wiz till you get a smooth silky mousse-like consistency. Set aside in the fridge for at least 30 minutes or overnight!  Garnish w a combo of fresh, frozen and freeze dried blueberries for extra crunch and a sour-sweet hit! Sit back, smile and Glow!
